Easiest Pumpkin Muffins Ever – Only 3 Ingredients!

It’s mid-November and nearing Thanksgiving, and we’ve all been seeing pumpkin recipes everywhere. You may already be involved in the pumpkin craze, or you may be like me. I usually am baking pumpkin pies back in September, but I’ve been at a much slower pace starting baking-festivities this year. With being so busy at school and not wanting to spend much time in the kitchen during the short weekends I have with Donovan, I don’t have two-three hours slaving away to make a Fall-favorite pumpkin dessert.

BUT I love Fall. And I love the foods of Fall. Don’t get me wrong, I’ve already bought my fair share of pumpkin sugar cookies and pumpkin steamers. I just don’t have time to make the homemade pastries that I’ve been missing out on and dreaming of. Then these muffins came into my life. So stinkin’ easy, soo tasteful, and.. onlyย 3 ingredients! THREE!

To make it even better, these were originally a Weight Watchers recipe, so they’re pretty healthy! Weight Watchers, however, does not make them with chocolate chips, but let’s be real, those are definitely necessary. For reference, WW’s 2-ingredient muffins are only 90 calories and 2 WW Plus Points.


1 Box of Spice Cake Mix

1 15 oz. can of pumpkin puree

1 Cup of chocolate chips


Okay here’s the hard part, so keep up with me.

1. Dump the cake mix and can of pumpkin into a bowl. Mix.

2. Add the chocolate chips and mix.

3. Plop batter into greased muffin tin.

Warning: The batter will be quite thick and sticky. Totally fine!! If it really bothers you, I’ve heard some people add a cup of water to avoid this and make it settle better. However, I loved the density of these and the character the rough looking top gave them!

4. Bake at 350ยฐ for 15-20 minutes.

That’s IT!

I told you they were insanely easy.

  3. interesting three ingredient mix. I could totally do this and swap out the pumpkin for something else (I’m allergic) There’s nothing better than the smell of delicious spices in the fall.
